Spiced Candied Pecans

Earlier this week I found myself staring at a beautiful bag of organic pecans I got on sale thinking about how I haven’t had candied pecans in ages. They sounded so good. The only problem was that I was trying really hard to eat less sugar and knowing how many of these sweet crunchy morsels I would probably consume, it seemed like I would probably be falling off the less sugar band wagon. After contemplating it half the day, I decided some experimenting was in order. Since maple syrup is one of my favorite natural sweeteners and maple and pecan just sounded like they go together I started with that. I wanted to add some spices too and make them somewhat of a cinnamon sweet pecan so I experimented with a batch using kitchen spices and one using vitality essential oils. They were both so good! They were perfectly sweet with a delicious crunchy glaze and the delectable undertones of cinnamon and nutmeg hugging the soft roasted pecans. Even my kiddos who don’t like nuts were devouring them at a rapid rate and I think these will become another favorite snack at our house. They would make a great gift too if we could keep them around long enough to share.

The ones made with spices had a slightly milder flavor than the ones made with oils. Some of my family preferred the subtle tasting ones and some preferred the stronger flavor. You could get a stronger or milder flavor with either though by just increasing or decreasing according to your tastes.

Spiced Candied Pecans (with spices)

12 ounce bag of pecan halves (about 3 cups)

1/2 cup pure maple syrup

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/8 teaspoon ground cloves

1/8 teaspoon ground ginger

1/8 teaspoon salt

  • Preheat oven to 250 degrees. Line a cookie sheet with parchment paper.
  • In a bowl whisk together the maple syrup, spices and salt.
  • Add the pecans to bowl and fold until the pecans are completely covered in syrup.
  • Pour the pecans and syrup onto the parchment lined cookie sheet.
  • Bake the pecans in preheated oven for 1 hour to 1 hour and 10 minutes, stirring nuts around on the tray every 10 minutes. They are finished when the nuts are soft and the syrup looks like it has formed a nice crunchy glaze.
  • Allow to cool and store in an airtight jar or container.
  • Enjoy and try not to eat them all at once!

12 ounces pecan halves (about 3 cups)

3 drops Nutmeg vitality essential oil (I like the Vitality oils from Young Living since they are labeled for internal and culinary use.)

2 drops Cinnamon Bark vitality essential oil

1 drop Clove vitality essential oil

1 drop Ginger vitality essential oil

  • Preheat oven to 250 degrees. Line a cookie sheet with parchment paper.
  • In a bowl whisk together the maple syrup and essential oils.
  • Add the pecans to bowl and fold until the pecans are completely covered in syrup.
  • Pour the pecans and syrup onto the parchment lined cookie sheet.
  • Bake the pecans in preheated oven for 1 hour to 1 hour and 10 minutes, stirring nuts around on the tray every 10 minutes. They are finished when the nuts are soft and the syrup looks like it has formed a nice crunchy glaze.
  • Try to wait for them to cool before enjoying!
  • Store in an airtight jar or container.
