We have been working hard here to make an extra big push to get some of the remodeling finished on our old farmhouse which has added a little extra craziness to our place. I told my husband this weekend that if a family can survive all the decisions and trips to the hardware store they are probably a pretty strong family. 🙂 In the midst of all the busyness I began to think how great it would be to have a delectable chocolate snack that was actually good for you and included some extra nutrients. That is how this delicious treat was born!
These bars basically taste like a gooey piece of fudge but are actually a small little chunk of tasty protein and energy supporting nutrients! They include nut butter for protein, coconut oil to provide healthy fats and support energy levels and metabolism and are sweetened with maple syrup. Add in the antioxidants in raw cacao powder; spirulina which is a plant source of protein as well as being loaded with vitamins and iron; maca powder which can support healthy energy levels as well as nourishing the adrenal glands, supporting a healthy response to stress and is loaded with vitamins; and ashwagandha root powder which helps to support endocrine health and a healthy response to stress and you have a bite of health supporting fudginess!
These bars definitely need to be stored in the fridge as they do melt if they are left out too long. However if you keep them cold they stay firm and delicious. Although if they do melt you could just eat with a spoon. Or mix into yogurt. Or use as a dip. Basically it is scrumptious in any form. My kiddos and husband agreed so it was an all around success that we plan to make again. They all enjoyed them and no one even detected the extra goodness mixed inside.
Fudgy Pick-Me-Up Bars
1/2 cup coconut oil
2/3 cups natural nut butter (almond or peanut are great!)
1/2 cup pure maple syrup
2 teaspoons pure vanilla extract
2 teaspoons red maca powder
1 teaspoon ashwagandha powder
1/2 teaspoon spirulina powder
Optional: 2-3 drops vitality essential oil of choice (peppermint and orange are both luscious!)
-Prepare an 8×8 glass pan by lining with parchment paper letting some hang over the edges to help you remove the bars later. You could also use a pie plate in a pinch.
-Place the coconut oil, nut butter and maple syrup in a small saucepan over medium low heat. Stir continually until it is all melted together then remove from heat.
-Mix in the vanilla, maca powder, ashwagandha powder and spirulina powder whisking until well combined.
-Pour the mixture into your prepared pan. Place in the fridge for a couple of hours to let it firm up.
-Pop the fudge out of the pan with the help of the parchment paper. Cut into small squares and enjoy! Store the fudge in the fridge in a covered container.
